Pasta with eggplant and garlic herb sauce

2 cups Pasta * of any choice2 tbsp garlic1/2 Peppers, red and green each 1/2 onion 2 tomatoes1 medium eggplant1/3 cup chicken stock
1. First cook the pasta as instructed on the packet.
2. While pasta cooks, prep all the vegetables
3.Saute the onion, peppers and eggplant in a separate pan.
4. when egg plant cooks, add tomato and garlic along with the herbs. Then add salt for taste and pepper if you like it hot.
5. Add the chicken stock to make the sauce.
6.then add the pasta and mix together before serving.
7. you can also opt to serve the sauce on top of the pasta instead of mixing together
