Crock Pot Potato Soup

Ingredients
6 potatoes, peeled and cubed (approx. 1/2 inch cubes)3 large carrots, sliced3 celery stalks, sliced1/2 cup chopped onion1-3 garlic cloves, crushed (depends on your taste)2 cups vegetable or chicken stock4 cups water1/2 cup evaporated milk (skim or 2%)To taste:saltpepperparsely flakescorrianderancho chile powder
Directions
In a crockpot, add potatoes, carrots, celery, onion, garlic, stock, and water. Cook on low for 6-8 hours or high for up to 4 hours.

Add evaporated milk 40 minutes before serving if cooking low, or 30 minutes before serving if cooking on high. Add spices at this time and allow to simmer for the time needed.

If you want a smoother, creamier soup, *before adding milk* add half of the soup to a blender and blend until smooth and add back into crockpot. Add milk and seasonings as directed above.

Serve with fresh bread and a side salad.
