Apple Oatmeal Muffins

2 cups unbleached spelt flour2 tsp baking powder1 tsp cinnamon1/2 tsp sea salt1 1/2 cup vanilla or plain soy milk1/2 cup sucanat1/4 cup melted coconut or extra virgin olive oil2 tsp vanilla extract (not artificial)2 small apples, chopped1/2 cup walnuts, coarsely chopped1 Tbsp oatmeal
1. Preheat oven to 350. Grease 12 cup muffin pan with melted coconut or extra virgin olive oil, or spray with Pam. Set aside.
2. Sift flour, baking power, cinnamon, and salt together in a large bowl. Stir to mix well.
3. In a medium bowl, whisk together soy milk, sucanat, oil, and vanilla.
4. Make a well in the center of the dry ingredients and pour the wet ingredients into it. Use a large spoon or rubber spatula to combine the ingredients. Stir and fold rather than beating; do not over mix. The batter should be lumpy.
5. Fold in the apples and walnuts.
6. Divide the batter evenly into the 12 muffin cups.
7. Sprinkle the oats over the muffins.
8. Bake for 20 to 30 minutes, or until the muffins are nicely browned and a toothpick inserted into the center of one comes out clean.
9. Remove the muffins from the oven and allow them to rest in the tin for 5 minutes before removing them.
