Savoury cornbread

Ingredients

Flour, white, 1 cup Yellow Cornmeal, 1 cup Granulated Sugar, 2 tsp Baking Powder, 1 tsp Salt, .5 tspLard, .25 cup melted, or 1/4 cup vegetable oilMilk, 1 cup Egg, 2 medium
Lightly grease a 9 inch X 9 inch pan on the bottom and halfway up the sides. Preheat oven to 425f/GM 7.
Combine all the dry ingredients in a large bowl.
Combine melted lard, milk, and eggs in a second bowl and beat briefly.
Add wet ingredients to dry all at once and stir until just mixed.
Spoon into the prepared pan.
Bake for 20 - 25 minutes until skewer inserted in the middle comes out clean and it starts to pull away from the sides.
Serve with ham and bean soup.

You can substitute vegetable oil. I believe though that the lard is healthier for me than over processed oils.
