mediterranean chicken salad

Ingredients
1 cup plain whole milk (greek) yogurt1 Tbl lemon juice1/2 tsp ground cumin1/4 tsp crushed red pepper3 cups cooked diced chicken breast1 cup chopped red bell pepper1/2 cup chopped pitted green olives1/4 cup diced red onion1 15 oz can no salt added garbanzo beans(drained and rinsed)
Directions
Combine 1st 4 ingredients in a small bowl; set aside. Combine chicken and next 5 ingredients in a large bowl. Add yogurt mixture to chicken mixture; toss gently to coat.

Yield, 6 servings

May be served with pita hals and lettuce and tomato slices.

    We love this recipe. We do add some addtional yogurt since it can be a tad dry...but the flavors are great. - 5/25/10
