Pineapple Bulgar Salad

Ingredients
3/4 cup cooked bulgar wheat (cooled)1/3 avocado, diced1/3 cup fresh pineapple, diced1/4 cup sweet peppers, diced2 tbsp celery, minced1 tbsp lemon juice1 tsp oil (I prefer grapeseed oil for this recipe)
Directions
Cook and chill bulgar wheat Mix all ingredients and serve. The lemon juice and pineapple will keep the avocado from turning brown.

Makes 1 serving. Half the recipe to serve as a side
