Enchilada Pie Casserole

Ingredients
Directions
1 lb of ground beef (or chicken breasts)green onions (as many as you like- chopped)1 can of enchilada sauce1 pkg. taco seasoning (or fajita)6 halved wheat tortillas1 can of black beans2 cups shredded mexican cheese*dollop of light sour cream optional
Preheat oven to 350 degrees
Slightly greased casserole dish (I prefer round with this recipe)
brown meat w/ seasoning and chopped gr. onion- drain any excess grease
add beans, sauce (in same skillet)- heat through
Place 2- 3 halved tortillas on the bottom of casserole dish, covering bottom
Place half of beef mixture, on top of tortillas then one layer of cheese
Repeat tortilla and beef layers until all ingredients are used
Bake for 35 minutes, uncovered
Makes about 8- 2in pie slices
This is a great dish to make the night before- but you will have to cook it about 45- 60 minutes to make sure it gets heated through.
