Wheat Germ, Lemon-Blueberry Muffins

Ingredients
1.75 flour1/3 C toasted wheat germ1/3 C sugar3 tsp baking powder1/2 tsp salt1 egg, beaten.25 C cooking oil1 C milk1 C blueberries, drained2 T sugar2 T lemon rind
Directions
Mix together flour through salt in Bowl #1. Mix egg through blueberries in bowl #2. Pour liquid ingredients into dry ingredients. Stir to blend. Fill cups 3/4 full. Sprinkle tops with sugar & lemon rind. Bake @ 425F for 20-25 min. Makes 12 muffins.
