Chocolate Fantasy Cake

Ingredients
Cake:2 cups all-purpose flour2 cups sugar1 cup water1/2 cup 70% vegetable oil spread (1 stick margarine)1/4 cup unsweetened cocoa powder2 eggs1/2 cup buttermilk1 tsp baking soda1 tsp vanilla1/2 tsp saltFrosting:2 cups powdered sugar2 tbsp unsweetened cocoa powder3 tbsp skim milk1 tsp vanilla1 tbsp 70% vegetable oil spread, melted
Directions
Preheat oven to 400 F. Lightly spray 9" x 13" Baker with vegetable spray. In Classic 2 qt. Batter Bowl, combine flour and sugar. Combine water, spread, and cocoa powder in saucepan; bring to a boil. Add to flour mixture stirring until well blended. Add remaining cake ingredients; mix well. Pour into prepared Baker. Bake 20-25 minutes or until cake tester inserted in center comes out clean. Frost cake while still warm. (note: original recipe baked in a stoneware baker. Just watch thte time if using metal or glass. Whena toothpick inserted in center comes out clean, the cake is done.)

For frosting, combine powdered sugar and cocoa powder in 1-qt Batter Bowl. Add milk, vanilla, and melted spread, stir until smooth. Spread over warm cake with All-Purpose Spreader. Cool; cut into squares.

Yield: 18 servings.
