4 (6-ounce) skinless, boneless chicken breast halves2 teaspoons fresh lemon juice1/4 teaspoon salt1/4 teaspoon black pepper1/3 cup Italian-seasoned breadcrumbscooking spray1/2 cup fat-free, less sodium, chicken broth1/4 cup dry white wine4 teaspoons capers, drained1 tablespoon butter
Place each chicken breast half between 2 sheets of plastic wrap, pound to 1/4-inch thickness using a meat mallet or rolling pin. Brush chicken with lemon juice; sprinkle with salt and pepper. Dredge chicken in breadcrumbs.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 3 minutes on each side or until chicken is done. Remove from pan; keep warm.
Add broth and wine to pan; cook 30 seconds, stirring constantly. Remove from heat. Stir in capers and butter.
Makes 4 servings - serving size = 1 breast and 1 tablespoon sauce
