Best Chinese Chicken Salad

2 Chicken Breast, no skin1 head, large Iceberg Lettuce.75 (3/4) cup Cucumber (with peel), diced into small bite size pieces4 large Scallions, raw, sliced into small pieces.5 (1/2) cup Almonds, I prefer the slivered, dry roasted variety Dressing.33 (1/3) cup Granulated Sugar7 tbsp Nakano Seasoned Rice Vinegar1 tsp Salt.25 (1/4) tsp Pepper, black.25 (1/4) cup Sesame Oil .25 (1/4) tsp Lemon juice
First you will want to start cooking your chicken. Use your favorite method (Steam, poach, or bake) Add a touch of Salt and Pepper to taste.
While that is cooking chop up the Lettuce, Cucumber, and Scallions. If you wish to add any other ingredients to your salad like tomato, snow peas, bean sprouts, or carrot (I use my peeler to create thin slivers.) prepare them now. (get creative, you can add any vegetable you want! Clean out the fridge and add the bell pepper, broccoli, celery, artichoke, anything you want! You can even add a hard boiled egg or some grated cheese! Make sure to add that to your tracker as I only have the ingredients listed in the nutritional tracker that I have in the recipe.
In a shaker or lidded jar add the : Granulated Sugar, Nakano Seasoned Rice Vinegar, Salt, Pepper, Sesame Oil, Lemon juice. Shake until fully blended.
After the chicken has cooled a bit pull it apart with 2 forks or slice it into small pieces. Toss all of the ingredients together leaving the almonds on the side. After you have dished up a hearty plate full, sprinkle with almonds and drizzle dressing on top.
