Stuffed Green Peppers

Ingredients
3 large green, red, or yellow peppers1 pound ground beef (or turkey or 1/2 meat - 1/2 mashed tofu)1/2 cup chopped onion1 can tomatoes1/2 cup long grain rice1 tablespoon worcestershire sauce1 tsp basil3/4 cup shredded swiss cheese
Directions
Halve peppers lengthwise, removing stem ends, seeds, and membranes. Immerse peppers into boiling water for 3 minutes. Invert on paper towels to drain well.
In a skillet cook meat and onion until meat is brown and onion is tender. Drain fat. Stir in undrained tomatoes, uncooked rice, worcestershire, basil, 1/2 cup water, 1/4 tsp. salt, and 1/4 tsp. pepper. Bring to boiling, reduce heat. Simmer 15-18 minutes until rice in tender. Stir in 1/2 cup of cheese. Fill peppers with meat mixture. Place in pan with any remaining meat mixture. Sprinkle with remaining cheese.
Bake at 180 C/ 375 F. for 15 minutes or until heated through.
Serve with a mixed salad and some crusty French bread.
