- Number of Servings: 8
Ingredients
Directions
1 can (15 oz) - Ranch Style Beans with Jalapeno Peppers1 can (369 grams) - Canned Chicken Breast in Water2 cans (4 cups) - Chicken Broth1 can (439 grams) - White Hominy1 can - Rotel Mexican flavorAny additional seasonings you wish to add.
Open all cans and pour into a medium sized pot over medium high heat. Break chicken up. Add any seasonings you wish to add. Bring to a boil. Boil for a few minutes. Turn off stove and serve!
Great with light or baked tortilla chips, fat free or 2% cheese, cilantro, salsa, pico de gallo, sour cream or pretty much anything you would put on a taco. (these ingredients are not included in the nutritional information.)
Lower the sodium with low sodium broth and hominy. You could also boil a couple of chicken breasts then shred them and add -- this would add to the cook time though.

this sounds very good.
I would use fresh chicken breast instead of using canned.
Can't wait to try it. - 6/12/09

It works well with fresh, canned or even rotiserrie. Hope you like it.
