Wheat Berries and Veggies

Ingredients
1 cup wheat berries1 can chicken broth1/4 cup water1 can tomatoes, okra, corn mix2 cloves garlic, mincedChopped onionsCelery - 1 stalk1 tbsp fresh parsley4 medium baby carrots, chopped1 cup fresh spinach1/2 tsp paprika1/4 tsp cayenne pepper1 tbsp olive oil
Directions
Boil chicken broth and water. Add wheat berries, return to boil. Simmer 45-60 minutes, or until tender. Drain.

While wheat berries are simmering, cook garlic, onions, celery, and carrots in olive oil for about 5 minutes. Add tomato, okra, corn mixture. Bring to boiling. Simmer and add spinach, paprika, cayenne, and parsley.

Combine veggie mixture and wheat berries.
