Natasha's Tuscan Bean Salad

Makes 8 1 cup servings1 cup dry Barley1 15 oz can canellini beans1 cup celery1 cup bell peppers assorted colors (optional)1 cup peeled cucumber (seeded)1 oz. chopped sundried Tomatoes in Oil1/2 cup diced red onionlemon rind3 tbsp Lemon Juice1/4 cup olive olive oil
cook barley per package instructions.
After Barley has cooked include the rest of the ingredients and mix well. Refrigerate overnite.
Options: Can be mixed with chicken, salmon, feta cheese and or tuna. If so I would recommend cutting serving of bean salad in half.
