Harvard Beets

Ingredients
16 ounce can of beets1/2 cup beet liquid1/2 cup vinegar4 teaspoons cornstarchsugar substitute equivalent of 2 tablespoons of sugarpinch of salt
Directions
Drain beets reserving 1/2 cup of liquid.
In a medium saucepan, combine all ingredients but the beets. Cook and stir over medium heat until thickened. Add beets, serve warm.

    Made them for my sister, a beet fan, and she was wowed. Didn't have any sugar substitute on hand, so I used 1/3 cup of the juice from a can of mandarin oranges. Love the heat, the textures, the pretty color and the playfulness in flavor juxtaposing the vinegar with the sweet beets. - 2/9/09
