Yogurt Wheat Bread

Ingredients

3.5 cups whole wheat flour3.0 cups white all-purpose flour4 Tblsp packed brown sugar2 tsp. salt1Tblsp yeast1.5 cups water2/3 cups plain, fat-free yogurt4 Tblsp butter
Set aside 1 cup all-purpose flour.
In large bowl mix all dry ingredients, including the yeast.
Heat water, yogurt and butter to 100-120 degrees
Stir water mixture into dry ingredients.
Add enough reserved flour to make a soft dough.
On a floured surface knead approximately 4 min.
Divide dough in half and shape each as desired- I usually braid this by making each dough ball into 3 ropes and braiding the rope strands to complete 2 loaves of braided bread.
Let rise in a warm, draft free location for 30 minutes.
Bake at 400 degrees for 20-25 minutes.
If desired brush hot loaves with melted butter for a soft crust.
Cool on a wire rack.
