Tasty Turkey Chili

2 Tbsp olive oil8 oz Trinity Mix or (3oz diced onion, 3oz diced peppers and 2 oz diced celery)1 Tbsp fresh or roasted garlic20 oz ground turkey1 packet chili seasoning packet1 (16oz) can chili beans, undrained1 (10oz) can diced tomatoes with green chiles, undrained1 (8oz) can tomato sauce
Makes six servings
1. Preheat large saucepan on medium-high 2-3 minutes. Place oil in pan; swirl to coat. Add trinity mix and garlic; cook 6-8 minutes, stirring often, until browned.
2. Reduce heat to medium; brown ground turkey 5-7 minutes stirring until it crumbles and is well browned.
3. Stir in remaining ingredients. Bring to boil; reduce heat to low and simmer, stirring occasionally, until thoroughly heated and flavors are well blended.

I just realized I forgot to add the garlic when I made this. I didn't have cheese, so I sprinkled crackers on top. The flavor was good, but not the best chili I've ever had. The veggies were definitely different from what I have known growing up in Texas, but it's a good way to sneak in veggies. - 4/7/11
