Ingredients
1 lb of extra lean (93%) ground beef2 cloves garlic, chopped fine1 small onion, chopped 1 large sweet potato, sliced1 large potato, sliced1 large summer squash or zuccini, sliced1 can Low Sodium Tomato Soup1 can Low Fat Cream of Mushroom SoupSalt and Pepper
Directions
Preheat the oven to 425
Mix onion, garlic and ground beef and press into bottom of 9 inch casserole dish. (These are deeper than a pan)
Layer the potatoes on top of beef, then layer the veggies.
Evenly spoon on the mushroom then the tomato soups. Salt and pepper as desired.
Bake for 35 minutes covered, then 10 uncovered. When a fork easily goes through the potatoes, it is done.
Makes 8 servings.
