Macaroon Balls

Ingredients

7 medium size eggs2 cups white sugar1 tsp vanilla extract7.5 cups Coconut, half desiccated and half shredded coconut
makes 60 balls.
Pre heat oven 150'C.
Combine eggs and sugar, beat with mixer until
thick and pale.
Add all the coconut and combine well, If mixture is still abit sloppy add abit more coconut.
Roll into one inch size balls and place on to
greased or lined cookie tray.
Bake fot 35 - 45 mins until lightly golden or feel firm'ish to the touch.
Remove from oven and cool on baking-rake.
Store in air tight container.
