RR Smoky-Spicy Sweet Potato Soup

Ingredients
4 sweet potatoes1 T. EVOO4 slices bacon chopped1 large onion chopped1 large carrot choped1 chipotle in adobo, plus 2 t. 5 sprigs thyme1 bay leaf32 oz. of chicken stockzest of one orange and all the juice1/8 t. cinnamon1 t. of maple syrup or honey for drizzlingsalt and pepper1 T. low fat sour cream per bowl
Directions
boil the potatoes, drain and return to pot
in other pan, heat EVOO, add bacon and then remove bacon. add onion, carrot, chipotle, thyme and bay until the onions are soft. stir in broth, zest, juice and cinnamon; drizzle with honey and add salt and pepper. simmer until potatoes are tnder, discard herbs. add the broth mix to the potatoes and puree with immersion blender. serve with the sour cream and bacon crumbles on top! (usually i would make with turkey bacon but in a pinch regular bacon works and since there isn't too much per bowl, delish!)
