Hippified Carrot Muffins

1 tbsp ground flaxseed1/4 cup boiling water200g whole wheat flour100g flour1/2 tbsp baking powder1/2 tbsp cinnamon1 tbsp vanilla100 mL canola oil100 mL skim milk3/4 cup sugar400g grated carrots1/4 cup hulled hemp hearts
Preheat oven to 400F, grease 18 muffin cups.
Whisk together flaxseed and boiling water. Let stand 10 minutes.
Whisk together the dry ingredients in a large bowl.
In another bowl, beat together flax mixture, vanilla, oil, milk and sugar until well mixed.
Beat into the dry ingredients.
Fold in carrots and hemp hearts gently.
Spoon into prepared cups.
Bake 22 minutes, cool 10 minutes in tins and then turn out and cool completely on a rack.
