Curried Mediterranean Couscous

Ingredients
1 clove garlic1 small onion, diced1 tsp canola or olive oil1/4 tsp curry powder1 3/4 cup water or unsalted stock (chicken or vegetable)1 1/2 cups diced eggplant1 Tbsp minced rosemary, fresh1 carrot, grated1 box Near East Mediterranean Curry Couscous1/2 cup seedless grapes, halved
Directions
Heat oil in 2 qt pot, add garlic and onion, saute until transluscent. Add 1 3/4 cup water, 1/4 tsp curry, spice packet from couscous, eggplant, rosemary and grated carrot. Bring to boil, boil about 3 minutes. Add couscous, cover, remove from heat, let sit 5 minutes. Stir in grape halves and serve. Makes 3 main-dish servings or 5 1-cup side dish servings.
