Red Bean Soup

Ingredients
Celery, raw, 1.5 cup, diced Onions, raw, 1 medium (2-1/2" dia)Scallions, raw, 4 medium (4-1/8" long) Green Peppers (bell peppers), 0.25 cup, chopped Smoked Pork Neck bones, 25 oz Goya Red Kidney Beans, 1.5 cup Baked Potato, with skin, 1 large (3" to 4-1/4" dia. Baby Carrots, raw, 15 large
Directions
In Large Pot on Medium low Heat. Add Smoked Pork Neck bones, and Red Kidney Beans and 6 Cups of Water.

Add Celery, onions scallions and green pepper.

Partially cover and simmer for about 2 - 3 hours until meat is falling of the bones and Kidney beans are tender.

Add Potatoes and carrots cover turn down to low medium heat and cook for another 30minutes.

Serve Hot

    I love this recipe but instead of using pork I use saltfish instead. Just add the saltfish in shreds with the droppers. how does this change affect the nutritional value? I am trying to add this food to my lunch segment on my tracker. - 9/3/10
