My Favorite Chicken Salad

Ingredients
2 large, boneless, skinless chickjen breasts, cooked and diced1/2 c. chopped celery1/2 c. chopped apple, (I prefer granny smith)1/2 c. halved seedless grapes (red or white)22 whole natural almonds, coarsely chopped1/2 c or 6 Tbsp of Kraft Miracle Whip LIght Dressing8 large, crisp lettuce leaves
Directions
Combine all ingredients except for lettuce leaves and mix thoroughly. Serve on lettuce leaves

    Very good. i've found it's called a Waldorf salad. I used spinach instead of lettuce, for some more fiber. And i plan on adding in some tangelo next time. - 10/6/08
