ORANGE PARFAITS

Ingredients
1 pkg (4 servings)size sugar-free vanilla pudding mix1 3/4 cups orange juice1 container (8 oz) vanilla or pineapple low-fat yogurt3/4 cup coarsely crushed ginger snaps
Directions
In bowl, prepare pudding mix according to package directions, using orange juice instead of milk. Cover surface with plastic wrap and chill thoroughly.

Before serving, fold yogurt into pudding.

Divide 1/3 of pudding mixture among 6 glasses. Spread with half of the crushed ginger snaps. Repeat pudding and cookie layers. Top with remaining pudding mixture.

Can be garnished with orange peel or mint sprig.
