Spicy Rice Soup

Ingredients
1/2 lb lean free-range ground beef1 clove garlic, minced3-1/2 cups water2 beef bouillon cubes1 (10-ounce) can diced tomatoes with green chilies1/2 c niblet corn1/2 c green peas1/4 cup cooked whole grain riceGreen onions, chopped
Directions
Brown the ground beef with the garlice in a medium saucepan, stirring until crumbly; drain. Add the water, bouillon, tomatoes, corn, and peas; bring to a boil. Reduce heat and simmer, uncovered, for 5 minutes. Add rice and simmer, covered, for 5 minutes longer. Garnish with green onion and serve.

    LOVE this. I usually throw a ton of veggies in - corn, green beans, peas, carrots, ect. I also add lots of jalapenos to my servings!

    I make this at least every other week, and I freeze half so that I have enough for 3-4 meals a week! Very healthy and delicious! - 1/11/09
