Fiesta Chicken Fajita Salad

Ingredients
4 oz Grilled Chicken Breast tenderloins, about 41/2 Red onion, sliced1/2 Green Pepper, sliced lengthwise1/2 Yellow Pepper, sliced lengthwise1 Jalapeno Pepper, sliced around, no seeds3 cloves garlic1 tsp cumin seed or powder1/2 paprika seasoningSalad Dressing: 3 Tbsp low fat sour cream and 3 Tbsp your favorite salsa,
Directions
Grill chicken - I use the George Foreman grill - set aside to cool and slice.
Prepare peppers, onions, garlic and stir fry in pan sprayed with cooking spray.
Add Cumin seed - about 3 or 4 good pinches and Paprika seasoning.
Mix together sour cream and salsa and set aside to mix.
When veggies are cooked but still crisp add chicken to pan to heat through and toss.
Top your favorite salad greens with the grilled mixture - add dressing.

This makes 2 servings. 2 cups of salad and half the cooked mixture makes a hearty salad meal.

Optional: You could add grated or shredded cheese of your choice, not in calorie calculations.
