Beef Biscuits & Gravy

Ingredients
Sauce:2 small jars of dried beef (or one large one if you can find it that way - it's not sold in my area)2 Tbsp butter or margarine2 Tbsp flour3/8 tsp salt1/8 tsp pepper1 cup milkBiscuits:2 cups flour1 Tbsp baking powder (3 tsp)1 tsp salt1/4 - 1/3 cup shortening2/3 cup milk, buttermilk or yogurt
Directions
Biscuits:
Mix flour, baking powder, and salt. Drop in the shortening and mix until crumbly. Add milk and mix. Form dough into soft ball and trun out onto lightly floured surface or waxed paper. Knead 10 times, just enough to activate the gluten. Roll out the dough until 1/4" thick and cut with biscuit cutter or clean glass and place on cookie sheet. Alternatively you can drop the biscuits onto the cookie sheet. Bake at 425 for 10 - 15 minutes.

Makes about 12 biscuits.

Gravy:

Before beginning, rinse dried beef and cut or tear into bit sized pieces. Rinsing the beef romoves almost all the salt (therefore sodium). Melt butter in saucepan over medium heat. When the butter is completely melted, remove the pan from the heat. Stir in the flour and stir until smooth. Add the salt and pepper and return to heat. Cook, stirring constantly, until it bubbles and sort of sizzles for a minute or two. Gradually (very slowly, actually) add the milk and stir. Add the dried beef and cook the sauce until it boils. Boil for a full minute and remove from heat.

Total recipe serves about 6 people - my family has 6 but 2 are toddlers so eat about the same for 1 person but I also have a teenager who eats the same as my hard-working husband.
