Roasted Bell pepper w/ lemon and mint

Ingredients
4 Bell peppers Yellow or red5 Tbsp or Olive Oil1/2 of a lemon squeezed1 garlic clove slicedMint leavessalt to taste
Directions
Roast Bell peppers on open flame of gas burner or grill on BBQ. Char the skin til black all around. Place peppers in newspaper or zip lock bag, but do not zip. let stand 10 min. Take peppers out, and peel charred skin off. Slice into strips, disgarding seeds, and ends.
place in boel, add lemon, oil, garlic, salt and torn mint leaves. Coat bellpeppers with liquid. let stand 10 min before serving.
