3 eggs3/4 C. egg whites1 1/2 C. applesauce1/2 C. oil2 C. sugar2 C. Splenda4 C. grated zucchini5 C. whole wheat flour1 C. ground flaxseed2 C. chopped walnuts2 tbsp vanilla extract1 tsp. baking powder1 tsp. baking soda1 tsp. ground cloves1 tsp. ground nutmeg1 tsp. salt2 tbsp. cinnamon
Beat eggs until light and fluffy. Add rest of ingredients and mix very well. Bake @ 350 for about 1 1/2 hrs. or until toothpick inserted in middle comes out clean.
Makes 2 large loaves. Serving size calculated using 15 slices/loaf.
