Chicken and Gnocchi

Roaster chicken from Stop N Shop -use 1 wing, 1 leg and 1 breast1 can Cream of Chicken soup, undiluted1 cup Mushrooms2 Tbsp Olive Oil1 pkg prepared Gnocchi2 oz White WineMontreal Steak Seasoning1/8 cup non-fat milk
Put a large pot of water on the stove, and bring to a boil.
Saute mushrooms in olive oil. Add Montreal Steak Seasoning to taste. Pull skin off chicken pieces and debone. Add cubed pieces of chicken to pan. Add soup mix, diluting with white wine and milk. Turn heat down to keep warm without burning.
Add gnocchi to water and cook per pkg instructions.
Serve. Makes 6 1/2 cup servings

This was good but slightly salty - I think I would use low-sodium cream of chicken soup next time. I used a rotisserie chicken for the meat, might try a lemon pepper one next time. I would also add some garlic. This was super easy to fix, my kids loved it, and it was something different. Thanks! - 9/14/09
