Fresh Peach Salsa

Ingredients
2 ripe but firm large peaches1 tablespoon extra virgin olive oil 1 tablespoon fresh lime juice1/4 cup diced red bell pepper1/4 cup diced green bell pepper1/4 cup finely chopped red onion 1 tablespoon chopped cilantro 1 teaspoon (or to taste) minced jalapeno pepper1/2 teaspoon salt fresh ground pepper to taste
Directions
Wash the peaches. Do not peel, but cut each in half and remove the pits; cut into 1/2-inch cubes.

Mix together the oil and lime juice in a mixing bowl. Add all remaining ingredients, and toss to mix well. Allow to stand five minutes or so, then taste for seasoning (you may like more lime juice, jalapeno, salt, etc.)

Salsa will keep one day in refrigerator before beginning to lose texture and may be kept longer, still having good flavor.
