Baked Sweet Potato

Ingredients
1 large or medium sweet potato1 tbsp brown sugar1 tbsp sugar1 tbsp Smart Balance Light Buttery Spread1 tbsp Cinnamon
Directions
This is a very easy recipe from my grandmother!

Take one sweet potato and peel off the skin. Or you can leave the skin on it if you prefer. Cut the sweet potato in to thin slices (about half an inch or less). Put into glass baking dish that is sprayed with cooking spray. Cover each sweet potato slice with a small amount of your tbsp of butter. Then sprinkle the slices with your sugar, brown sugar, and cinnamon. You can add more or less to taste. Bake at 350 degrees for 45-50 minutes or until sweet potato slices are soft.

    very good, though next time I will probably just bake the potato whole and add the cinninmon, sugars, and smart balance after. Even with spraying the pan first it required a good soak and scrub to clean. - 4/17/10

    I just baked the whole potato in the oven (poked a few holes in them, 350 degrees for 45 minutes on the oven rack).I loved every sweet buttery bite of this dish! I appreciate that this recipe uses REAL sugar vs. Splenda. I will be saving this one for use again in the future! - 2/13/11
