Hot & Sour Noodle and Mushroom Salad

Ingredients
9 oz/250g rice vermicelli noodles2 TBSP sesame oil6 scallions3 cups white mushrooms1/2 cucumbermixed greens, to serve (optional)*Dressing*4 TBSP sesame oil2 TBSP Thai fish saucejuice of 2 limes1 tsp sugar1-2 tsp hot chili sauce2 TBSP chopped fresh cilantro
Directions
1 - Soak the noodles in a pan of boiling water according to the package directions until tender. Drain and put in a large bowl. Add the oil and toss until noodles are well coated.

2 - Slice the scallions and mushrooms, then cut the cucumber into short think sticks. Add to the noodles in the bowl.

3 - For the dressing, put the oil, fish sauce, lime juice, sugar, and chili sauce in a small bowl and whisk together. Stir in cilantro.

4 - Pour the dressing over the salad and toss until well coated. Serve the salad immediately, with some mixed salad greens, if liked.
