Nick's Red Beans and Rice w/Turkey Sausage

Ingredients
5 c. chicken stock2 c. brown rice1 green pepper, chopped1 red pepper, chopped1 onion, chopped2 cloves garlic, minced2 Tbsp olive oil12 oz smoked turkey sausage, cut into 1/2-inch coins2 15-oz cans kidney beans1 15-oz can diced tomatoes1 tsp thyme1 bay leafGround black pepper to tasteHot pepper sauce to taste
Directions
In a pot, bring stock and rice to a boil. Cover, reduce heat to low, and simmer until liquid is absorbed, about 40 minutes. Saute peppers, onions, and garlic in oil until softened. Add sausage and saute until brown. Add beans and one cup of bean liquid, diced tomatoes with juice, thyme, and bay leaf. Simmer uncovered for 20 minutes, stirring occasionally. Season with pepper and hot sauce. Add rice to bean mixture. Stir to combine. Remove bay leaf. Serves six.

    This has become a new family favorite! Instead of the hot sauce, I just sprinkle in some cayenne or crushed red pepper and add just a bit of sea salt. Cornbread is an excellent side dish with this. It makes way more than 6 servings, but is excellent for lunch the next day! - 10/18/12

    I grew up eating fantastic red beans and rice ... and this recipe is G-R-E-A-T! Using canned red beans definitely speeds up the process - you can be sure that dinner will be done on time (not waiting for the beans to be soft enough.)
