Fresh Apple Cake

Ingredients
2 cups sugar2 1/2 cups self rising flour (I use Hudson Cream)1 tsp cinnamon3 eggs1 tsp vanilla extract1 cup chopped walnuts (I use the diced)1 cup butterscotch morsels/chips3 to 4 cups apples (I use 4 - makes it more moist)1 cup canola oil
Directions
Mix first 4 ingredients until smooth and add vanilla, apples and oil. Fold in nuts.

Pour in glass 9 x 13 pan and top with butterscotch morsels.

I also calculated it without the morsels and you can deduct 50 calories.

Bake at 350 for 45 mins to an hour. (depending on your oven)

This makes about 24 - 2 inch pieces
