Turkey & Bean Enchilada

Ingredients
4 oz lean ground turkey1/4 cup fat free refried beans1/4 cup tomato sauce1 T salsa or hot sauce1 oz low fat cheddar cheese1 soft taco size tortillachili powder, to tastecheyenne pepper, to tasteoregano, to tastenon fat cooking spray
Directions
Pre heat oven to 450 degrees.

Brown the ground turkey in a skillet with chili powder, cheyenne pepper and oregano to taste. When turkey is cooked through, add the refried beans and heat through, then remove from heat.

Spray a baking dish with non fat cooking spray and play tortilla in dish, put turkey-bean mixture in center and add half of the cheese.

Mix the tomato sauce and salsa together, add a couple spoon fulls of mixture to the enchilada then fold sides over and close with toothpicks. Put the remaining tomato mixture on the top followed by the remaining cheese. Put in oven and bake for 20 minutes.
