Tangy Red Grain Salad

Ingredients
3/4 cup water1/2 tsp kosher salt1/4 cup dry bulgur100g raw beets, coarsely grated (peeled if necessary)1 tbsp dried cranberries1 tbsp seasoned rice wine vinegar1/2 tbsp vegetable brothBlack pepper to taste
Directions
Combine water and salt in a small pot, bring to a boil.
Add bulgur and simmer 5 minutes. Remove from heat, cover and let stand 15 minutes.
Stir in beets, cranberries, vinegar, broth and pepper.
Serve immediately or chill.
