Spanish Rice

Ingredients
1 cup minute rice, raw1 cup salsa1/4 cup water1 can corn, drained1 can black beans, drained1/4 cup mexican cheese
Directions
Boil salsa and water in large sauce pan. Add minute rice and remove from heat. Let sit 5 minutes or until rice has absorbed all the liquid. Rice will still be undercooked. Add corn and beans to rice, and cook on medium low heat until heated through and rice is tender. Stir in cheese and heat until cheese is melted.

Makes 4 servings.
