Broccoli Corn Bisque

Ingredients
2 c. low sodium reduced fat chicken broth2 c. vegetable broth1/2 pkg. frozen broccoli florets1/2 pkg. frozen corn1/2 onion, chopped3 med. stalks celery, chopped1 tsp. diced garlic (jarred)1/4 tsp. tarragon1/4 tsp. thyme1/2 tsp. kosher saltfresh ground black pepper to taste2-3 c. fresh, baby spinach
Directions
Bring the broths to a boil. Add frozen vegetables and return to a boil. Add onion and celery. REturn to a boil then reduce to a simmer. Add garlic and spices. Simmer for 7-8 minutes. Add spinach and simmer 2-3 minutes more . Transfer in batches to a blender or food processor, or use a wand blender to process soup. Makes six 1 cup servings. Enjoy!
