Tasty Beef Fried Rice ( low carb)

Beef, round steak, 12 oz (use the stir fry package found at the supermarket to save)Cauliflower, raw, 1 head, medium (5-6" dia) *Kikkoman Lite Soy Sauce, 3 tbsp Scallions, raw, 1.5 medium (4-1/8" long) Garlic, 1 tsp Olive Oil, 1 tbsp Egg, fresh, 1 large Green Peppers (bell peppers), 0.25 cup, chopped
First grate cauliflower and set aside (Note: use the side on the grater that is used to shred cheese, this will make it resemble rice). Heat olive oil in a wok or nonstick frying pan. Add garlic, scallions, and green pepper. Cook for about 1 minute next add in the beef and push to the one side of the pan. While that is cooking add the shredded cauliflower to the other side of the pan cover and let steam for about 5 minutes. Next add soy sauce ( add to taste) and combine the cauliflower and beef. Finally beat the egg in a bowl and mix into mixture. Makes 6 one cup servings.
