French Style Beef Roast

Ingredients
3 # Rolled Rump Roast1 Tsp Salt1 Tsp dried Thyme leaves1 bay leaf1 Lg Garlic Clove, cut into fourths4 Cups of water4 Med Carrots, cut crosswise into halves or fourths2 med Onions, cut into fourths2 Med Celery, cut into 1 in pieces
Directions
Place beef roast, salt, thyme, bay leaf, garlic into dutch oven;add water. Heat to a boiling; reduce heat. Cover and simmer for 3 hrs.

Add remaining ingredients. Cover and simmer until beef and vegtables are tender, about 30 min. Remove beef and veg; cut beef into 1/4 in slices. Strain broth; serve with beef and veg.

Makes 8 servings

Serve with Cheery Layered salad and biscuits.
