Tropical Quinoa salad

Directions
1 cup dry Quinoa2 cup water1/4 c. lime juice2 Tbsp canola oil1/2 tsp cumin, ground1 1/2 c diced mango1 1/2 c diced pineapple
Put quinoa and water in pot to boil. Turn down to simmer and cover and cook until water is gone, 10 - 15 minutes. Meanwhile, mix all other ingredients. When quinoa is done, stir into the mixture. Refrigerate or serve room temperature.
