Nancy Clark's Oatmeal Pancakes

Ingredients
1/2 cup uncooked oats1/2 cup lowfat plain yogurt3/4 cup milkwhites from 2 eggs 1 tsp olive oil6 tsp brown sugar1/2 tsp salt1 tsp baking powder1/2 cup whole wheat flour1/2 cup white flour1 Tbsp ground almonds (optional)
Directions
In a medium bowl, combine the oats, yogurt and milk. Set aside for 15 to 20 minutes to let the oats soften.
When the oats are through soaking, beat in the egg and oil and mix well. Add the sugar, salt, and cinnamon, then the baking powder, and the flour. Stir until just moistened.
Heat a lightly oiled or nonstick griddle over medium-high heat (375 degrees for an electric frying pan).
For each pancake, pour about 1/4 cup batter onto the griddle.
Turn when the tops are covered with bubbles and the edges look cooked. Turn only once.
