Lasagna Bites

Ingredients
2-3 package plain or buttermilk biscuits1 jar (or less) favorite pasta sauce1 lb ground turkey (or ground beef or pepperoni) I used 85/15 turkey for nutrition infoMozzarella Cheese, part skim (about 1 cup)Ricotta cheese, fat free
Directions
Preheat oven to 400 degrees
Cook ground turkey
Spray muffin pan
Press one biscuit into each muffin cup, pressing around the edges forming a cup.
Mix turkey, cheese, and pasta sauce (add pasta sauce to get the consistency you want, don't make it too saucy)
Scoop mixture into each cup
top with a small dollop of ricotta cheese
Bake at 400 for 10 minutes.
Serve with pasta sauce on the side for dipping

Make 10 servings, 1 biscuit each (1 with a salad is plenty for me, my kids each eat at least 2)

    More like a filled pizza as you don't use any kind of a flat noodle like used in lasagna. Some pizzas use ricotta cheese besides mozzarella, but I want you to know it is very good and I did save in my cookbook!!! - 10/12/08

    Yes, you put the raw biscuit in the muffin cup, squishing it around the sides to make a cup (I have a handy Pampered Chef tool that helps with that but you can use your fingers) It cooks along with the filling. When the biscuits are golden brown, they are ready.
