Herbed Potato Soup

Ingredients
2 large potatoes, peeled and diced2 c water1 large onion, chopped1/4 c butter1/4 c white whole wheat flour1 tsp salt1 tsp fresh thyme, chopped1/4 tsp pepper1 1/2 c milk
Directions
Put potatoes and water in a large saucepan and cook until tender. While this is cooking, melt butter and saute onion until tender. Stir in the flour, salt, thyme, oregano ( if using) and pepper.

Gradually add milk. Bring to a boil. Cook and stir for 2 minutes. Add to potatoes and water. Serve
