Lower Fat Spinach Lasagna

Ingredients
2 cups lowfat cottage cheese (1% milkfat)1 large egg1.5 cups fat free mozzarella cheese (shredded)1 jar marinara sauce1-10 oz. package spinach (frozen)9 lasagna noodles1 cup waterblack pepper and italian seasonings to taste
Directions
In a large bowl, mix thawed and drained spinach, cottage cheese, 1 cup mozzarella, egg and seasonings.

Spray cooking spray on a lasagna tray or 13x9x2 baking dish.

Layer 1/2 cup sauce, 3 noodles and 1/2 cheese mixture. Repeat layer.

Top with remaining noodles then sauce and sprinkle with 1/2 cup of mozzarella.

Pour water around the edges and put a few toothpicks on top. This will prevent the cheese from sticking to the foil.

Cover with foil and bake at 350* for 1 hour to 1 hour 15 minutes, or until lasagna is bubbly. Let stand for 15 minutes before serving.

    This is awesome! I made it with sauteed squashes (yellow, zucchini, and eggplant). I also added mushrooms and onions and fat free ricotta cheese.

    I used lowfat ricotta (instead of cottage cheese), a 16 oz bag of spinach (instead of the 10 oz bag listed), chopped carrots and sliced mushrooms. My husband and I both loved it. This is going to be one of my regular recipes! - 7/29/07

    I subbed one package of part skim ricotta cheese for the cottage cheese. Used lots of onions and regular mozz cheese on whole grain noodles. Not as much sauce as I softened the noodles in boiling water first. - 2/26/11

    My husband is all about RED MEAT in lasagna, so I browned some lean ground TURKEY (shhh! don't tell!), added minced garlic, oregano and basil, and got it past him just fine! Lasagna also freezes well, so if I'm making one pan, I'll double the recipe and make an extra (or two!) for later. - 8/9/10

    YUCK! I don't know if I done something wrong, but this was horrible. The only thing I changed was I used wheat lasagna noodles instead of regular. Must just be me since everyone else rated this so high! - 2/19/09

    I use Egg Beaters instead of eggs and 1/2 low fat, 1/2 fat free cottage cheese. I also use chopped fresh spinach and add shredded carrots and sliced mushrooms. My kids love this! - 3/13/07
