Indian Red Lentil Dal

4.5cups cooked red lentils--or other colors--about 400 gr dry5 cups water1 tsp oil1 large thinly sliced onion4 crushed garlic cloves3 tsp coriander powder3 teaspoonns cumin powder3 teaspoons crushed red pepper2 teaspoons cardamom powder1 tsp cinnamon3 teaspoons tumeric powder1 teaspoon salt1 tablespoon lemon juice1 can light coconut milk
Makes about 6 cups--6 big servings
Wash lentils, cook til soft in about 5 cups water.
Dry roast all spices for about three minutes in a fry pan, set aside. Put in 1 tsp oil, fry onions and garlic til fragrant and well cooked, add roasted spices, cook and stir careful not to burn, another 3 minutes.
Decide if you like the moisture in the lentils, take out some water if you think there is too much. Add roasted spice-onion garlic mixture and coconut milk, stir well and cook together about 5 minutes. Add lemon juice, check for salt.
Eat with basmati rice, or veggies, or pita bread.
