Banana squash and red onion saute

Ingredients
2 cup banana squash, cubed1/2 red onion, sliced1.5 tbsp olive oil1/2 tsp salt1/2 tsp black pepper
Directions
1. Heat oil in pan.
2. Add onion, separating into individual rings, and squash. Sprinkle with salt and pepper.
3. Saute until tender over medium to medium-low heat.

Makes four servings.

    Worked like a charm! I buy banana squash as it's such a great source of potassium, and am always looking for ways to cook it aside from cubing it into soup. This was perfect, did not change a thing. - 7/30/09
